- 4 Smoked Loin Chops from Dragonfly Farm Store
- 4 Organic Apples Sliced – Gala or Grannysmith are good
- 1 Jar Sauerkraut – Homemade, or fermented
- 1 Large Onion Sliced
- 1 Tsp Peppercorns
- Salt to Taste
Pre-heat the oven to 350
Layer in a Pan (I use a 9 x 13 Pyrex)
1/2 the amount of Sauerkraut, apples and onions.
Arrange the Smoked Pork Loin chops so they are one layer deep
Layer on the rest of the sauerkraut, apples and onion
Sprinkle on Peppercorns and Salt
Add some Caraway Seed on top if you like for a little extra flavour.
Roast/Braise in the oven at 350 for 2.5 hours
Shut off the oven and let rest for 10 mins before serving.
Goes well with roasted potatoes, coleslaw and baked beans.
