It takes a little care to cook, but well worth the results. Picanha is a cut of beef taken from the top of the rump. It is know by many names in many countries, rump cover, rump cap, top sirloin cap or a culotte steak.

It is located right near the Tri-Tip and is part of the sirloin, hidden beneath the hip bone, giving this underused muscle some extra blood flow, resulting in extra flavour!

Put this steak between two screaming hot cast iron frying pans, just like a Tri-Tip for 7 mins. ,let rest for 5 off the heat and this medium rare large chunk of deliciousness is mouth watering yummy!
